Spanakopita

I first made spanakopita after seeing it in a Asda magazine and I’m so glad I did as its my favorite Greek dish.

Spanakopita is described as a Greek savory pie stuffed with feta cheese and spinich. Any recipe that states “stuffed” as a main description is alread a winner in my book!

I made it traditionally the first time as it was before my dietary issues but I have been able to adapt it easily. However, some will argue that this is more of a traditional English pie as its made with puff pastry rather than filo

Preperation time: 10 minutes

Cooking time: 40 minutes

Serves: 4-6

Gluten free ~ Vegan

Ingredients:

  • 320 g or a large bag of spinach
  • 1 large white onion
  • 400g of vegan feta cheese,I like to use Violife Greek white block
  • 3 tbsp of aquafaba
  • 2 tbsp of GF breadcrumbs, I like to use Asda free from bread crumbs
  • 1/4 tsp of nutmeg
  • salt and pepper
  • 1 tbsp of oil of your choice
  • 1 tbsp of milk replacement
  • 1 packet of GF puff pastry, I like to use Jus-rol

Method:

Pre heat your oven on 180c/306f

Chop your onion and fry in a little oil of your choice, once softened put to the side

Wash the spinich if not pre-washed, tear up into smaller piece and again put to the side

In a large bowl add the onion, cheese, spinish, aquafaber, salt, pepper and nutmeg and breadcrumbs and mix

Place in your pie dish and cover with the puff pastry

Trim to size making sure that it is just slightly over the edge of the sidh as it will shrink in the cooker and wash top with your milk replacement

Cook till your pastry is golden brown
